The Guayabita del Pinar is a type of alcohol derived from a small guava that only grows in the mountains of Pinar del Rio. All bottles contain one or two of these small guavas inside as its hallmark.
There are two variants of this drink: one is dry, such as rum and other one sweet, as some kind of liquor. Both have as exclusive producer and marketer the Guayabita Factory, located at No 189 Isabel Rubio, between Frank País and Ceferino Fernández in Pinar del Río
Initially, this product was distilled and disseminated by Lucio Garay in 1892, after the triumph of the Revolution, the Garay´s House became a factory, being the only of its kind in Cuba and the world.
The factory operates Monday to Friday and can be visited by the curious that might be interested in knowing and seeing guayabita processing (the recipe remains secret and is only known by one of its employees).
The most interesting thing of this factory is that, despite technological advances, most processes remain manual, as a guarantee of the quality and characteristic flavour of this product.
On weekends the factory is open to visitors, who can enjoy a tour that starts in the area of maceration and manufacturing (tanks and filters) through the cellars where the barrels, filters, tanks and processing and packaging machine of the product are stored and ends with a tasting of the Guayabita.
Despite being a heritage building in the city of Pinar de Rio, is expected soon to be redesign to improve the aesthetics of the place and buy new equipment, although the product manual process will continue.
